I have a Kenwood Mincer, which is about the cheapest good mincer around. It chews through sinew and fascia without any trouble at all and turns out really good mince.
There are few secrets to cooking venison mince beyond making sure it is cooked through so it is not too gamey. When making burgers use only coarse bread crumbs, as fine ones form too dense a patty and do not absorb the fat and juices so do not taste as good.
