These recipes are some of my favourites. They are all based on a very, very simple philosophy that cooking should be based on Fred Dagg’s cooking programme.

The only real secret to cooking upland game is let the birds settle in a fridge for at least two weeks before processing. Even the oldest rooster will be tender if it is allowed to settle before cooking or freezing.
